Easy Coconut Custard Pie

Prep time: 5 minutes / Cooking time: 60 minutes / Serves: 8


2 cups full fat coconut milk, canned

• 3 teaspoons stevia powder extract

3 eggs

1 dash salt

1 teaspoons vanilla

. cup almond meal

1 cup shredded coconut

Preparation and Instructions

1. Preheat oven to 350° F.

2. Mix all the ingredients except shredded coconut in the blender.

3. Add the coconut shreds and pulse a few more times.

4. Pour into a pie plate and bake for 50-60 minutes.
